Rich, chocolatey .. my kids call this ‘death by chocolate’
CAKE INGREDIENTS:
- 1 c butter, softened
- 2 c sugar
- 2 tsp vanilla extract
- 3 large eggs
- 2 1/2 c all-purpose flour
- 1 c cocoa powder
- 1/2 tsp salt
- 1/2 c instant chocolate pudding powder (1 small box)
- 2 1/4 c buttermilk
- 1 c chocolate chips
DIRECTIONS:
- Preheat oven to 350 degrees. Butter and flour a tube pan.
- In a large bowl, beat together butter, sugar and vanilla.
- Beat in eggs one at a time.
- In a medium bowl, stir together flour, cocoa powder, salt, pudding powder.
- Beat the dry ingredients into the butter mixture, alternating with the buttermilk.
- Stir in chocolate chips.
- Pour into the prepared pan.
- Bake for 30 minutes.
- Reduce oven to 325 degrees and bake for another 45 minutes, until cake tester comes out clean.
- Cool cake completely.
ICING INGREDIENTS:
- 1/4 c water
- 1/4 c butter
- 1/2 tsp vanilla
- 1/2 c cocoa powder
- 1 1/2 c icing sugar
- 4 Tbsp heavy cream

ICING DIRECTIONS:
- Heat water, butter and vanilla in a saucepan until melted.
- Remove from heat, whisk in cocoa powder, then icing sugar.
- Stir in cream.
- Pour over the cake allowing to drip over sides and fill the middle hole.
- Once completely cooled, sift icing sugar on top.
