These saucy, yummy scalloped potatoes take a while to make but they’re awesome for a family holiday meal.
INGREDIENTS:
- 8 large potatoes, peeled and sliced thinly
- 1 medium onion, sliced thinly
- 3 Tbsp butter
- 1/4 c flour
- 2 c chicken stock
- 2 Tbsp mayonnaise
- 1/2 tsp salt
- 1/4 tsp pepper
- 1 c shredded sharp cheddar cheese
DIRECTIONS:
- Preheat oven to 325 degrees. Spray a 9 x 13 inch baking dish with olive oil cooking spray.
- Mix together potatoes and onions.
- Melt the butter in a saucepan. Whisk in the flour. Gradually add the broth, whisking continuously.
- Whisk in mayonnaise, salt and pepper.
- Pour over the potatoes and onions. Sprinkle with shredded cheese.
- Bake uncovered for 2 hours.
