Breaded Chicken Breasts


Simple and easy, pair these yummy breaded chicken breasts with roasted vegetables, rice or pasta. I use the thin fast-fry chicken filets from the grocery store but it’s not that much harder to buy chicken breasts, place them between two pieces of saran wrap and beat them thin with a meat mallet.

Ingredients:

  • 1 lb chicken breast, pounded thin
  • 2 c bread crumbs
  • 1 tsp salt
  • 1/2 tsp pepper
  • 1 Tbsp chopped parsley

Directions:

  1. Coat the bottom of a heavy or cast iron pan with oil.
  2. Combine bread crumbs, salt, pepper and parsley.
  3. Press the chicken into the bread crumbs then place in hot oiled pan.
  4. Cook on both sides until browned and cooked through.
