Baked acorn squash is so easy to make and is the perfect side dish to Thanksgiving dinner or Sunday meatloaf.
Ingredients:
- 1 large acorn squash
- 2 Tbsp butter
- salt & pepper
Directions:
- Preheat oven to 350 degrees.
- Cut the squash in half and scoop out the seeds. Place cut side up in a shallow baking dish.
- Generously salt and pepper the squash and place 1 tablespoon of butter in each half.
- Bake for one hour until very soft (you can easily stick a fork into the flesh of the squash).
- Allow to cool enough that you’re able to scoop out the flesh.
