Serve with a dollop of creamy greek yogurt and fresh chopped cilantro.
Ingredients:
- 2 lb stewing beef, sprinkled with salt & pepper
- 1 Tbsp olive oil
- 1 onion, chopped
- 4 garlic cloves, minced
- 1 Tbsp ginger, minced
- 1/2 tsp garlic powder
- 3/4 tsp turmeric powder
- 1 Tbsp ground cumin
- 1 tsp chili powder
- 1/2 tsp mustard powder
- 1/4 tsp cayenne pepper (or to taste)
- 1/4 tsp black pepper
- 2 large tomatoes, chopped
- 1 – 1 1/2 c beef broth
- 1 c chopped fresh cilantro + extra for garnish
- 3/4 plain greek yogurt
- salt & pepper
Directions:
- Heat olive oil in a large pot over high heat. Add beef and brown on all sides.
- Add onion, garlic and ginger and continue to cook until soft.
- Add garlic powder, turmeric powder, ground cumin, chili powder, mustard powder and black pepper.
- Add chopped tomatoes and 1 c of beef broth, and chopped cilantro.
- Simmer over low heat for 40-50 minutes, until the beef is fork-tender. If it gets too dry, add more beef broth.
- Add the plain greek yogurt and stir. Add salt and pepper to taste.
- Serve with a greek yogurt and fresh cilantro over basmati or jasmine rice.
