Creamy Chicken & Wild Rice Soup


Perfect warm-up for a cold winter day. I used a wild rice blend from Floating Leaf.

Ingredients:


  • 1/4 c butter
  • 1 1/2 c chopped carrots
  • 1 1/2 c chopped celery
  • 1 1/2 c diced onion
  • 4 cloves garlic, minced
  • 1 lb raw chicken breast, cubed
  • 2 tsp fresh thyme
  • 1/4 c flour
  • 10 c chicken stock
  • 1/2 c wild rice, uncooked
  • 1/4 c half-and-half cream

Directions:

  1. Heat butter in a large pot. Add carrots, celery, onion, garlic, chicken breast and thyme. Sautee until soft and chicken is cooked through.
  2. Add flour, whisk well.
  3. Add chicken stock and wild rice. Bring to a boil then reduce to a simmer for 30 minutes.
  4. Add half-and-half at the end.
