Perfect warm-up for a cold winter day. I used a wild rice blend from Floating Leaf.
Ingredients:
- 1/4 c butter
- 1 1/2 c chopped carrots
- 1 1/2 c chopped celery
- 1 1/2 c diced onion
- 4 cloves garlic, minced
- 1 lb raw chicken breast, cubed
- 2 tsp fresh thyme
- 1/4 c flour
- 10 c chicken stock
- 1/2 c wild rice, uncooked
- 1/4 c half-and-half cream
Directions:
- Heat butter in a large pot. Add carrots, celery, onion, garlic, chicken breast and thyme. Sautee until soft and chicken is cooked through.
- Add flour, whisk well.
- Add chicken stock and wild rice. Bring to a boil then reduce to a simmer for 30 minutes.
- Add half-and-half at the end.
