Ingredients:
- 1 1/2 c all purpose flour
- 1/2 c unsweetened cocoa powder
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp salt
- 1/2 c canola oil
- 1/2 c milk
- 2 eggs
- 1 tsp vanilla
- 1/2 c white sugar
- 1/4 c brown sugar, packed
- 1 1/2 c shredded zucchini
- 1/2 c semi-sweet chocolate chips
Directions:
- Preheat oven to 350 degrees. Grease or line muffin tins.
- In a large bowl, whisk together flour, cocoa powder, baking powder, baking soda and salt.
- In a separate bowl, whisk together oil, milk, eggs, vanilla, white sugar and brown sugar. Stir in shredded zucchini. Stir in dry ingredients. Fold in chocolate chips.
- Fill the prepared muffin tins and bake for 20-25 minutes until they spring back when lightly poked.
