Ingredients:
- 2 c flour
- 2 tsp baking soda
- 1/4 tsp baking powder
- 1 tsp salt
- 3 tsp cinnamon
- 3 eggs
- 1 c vegetable oil
- 1 1/2 c sugar
- 2 tsp vanilla
- 2 c mashed bananas (about 5)
Directions:
- Preheat oven to 350 degrees. Grease a mini loaf pan.
- In a large bowl, whisk together flour, baking soda, baking powder, salt and cinnamon.
- In a separate bowl, combine eggs, oil, sugar, vanilla and mashed bananas.
- Fill mini loaf pans about 3/4 full (they will rise).
- Bake for 25-30 minutes.
