Lebanese Lentils & Rice (Mujadara)


A great vegetarian dish, or serve with a side of fried steak or Kofta.

Ingredients:

  • 4 Tbsp olive oil
  • 3 onions, sliced
  • 5 garlic cloves, minced
  • 1 tsp cumin
  • 1 tsp cinnamon
  • 1/4 tsp allspice
  • 1/4 tsp turmeric
  • 1/2 tsp salt
  • 1/4 tsp pepper
  • 3 c brown rice, cooked
  • 2 c brown lentils, cooked

Directions:

  1. Heat 2 Tbsp of olive oil in a small fry pan. Place 2 of the sliced onions in the pan and cook over low heat, stirring occasionally, until the onions are caramelized. Season with salt & pepper and set aside.
  2. Heat the other 2 Tbsp of olive oil in a large frying pan or pot. Add the 3rd onion and garlic. Cook 1-2 minutes.
  3. Add the cumin, cinnamon, allspice and turmeric and stir.
  4. Add the rice and lentils, stir and heat through.
  5. Serve topped with the caramelized onions.
