This sauce is super easy to make and tastes so authentic with the red wine mixed with the fresh herbs. Serve over a broad pasta like linguine, fettuccine or silky egg noodles.
Ingredients:
- 2 Tbsp olive oil
- 1 whole onion, diced
- 8 garlic cloves, minced
- 1 lb lean ground beef
- 1/2 c red wine
- 1/2 c beef broth
- 1 can (28.5 fl. oz) diced tomatoes, NOT drained
- 2 Tbsp tomato paste
- 1 tsp oregano
- 1/4 tsp black pepper
- 1/2 c fresh parsley, chopped
- 1/2 c fresh basil, chopped
- salt to taste
Directions:
- Heat olive oil in a heavy pot.
- Add onion and garlic and sauté until soft.
- Add the ground beef and brown. Drain off 1/2 the fat.
- Add the red wine and cook for 1 minute.
- Add the beef broth, diced tomatoes and tomato paste, oregano and black pepper.
- Bring to a boil then lower to a very low simmer for 2 hours (OR transfer to a slow cooker and cook on low for 5-6 hours).
- In the last 15 minutes of cooking add the fresh parsley and basil. Add salt to taste.
